Makes 2 large portions or 4 small
-5 c water
-2 tbsp miso paste (I use light yellow)
-0.5 medium carrot
-4-5 sugar snap peas
-2 small mushrooms*, any variety you have on hand or prefer
-0.5 Tbsp Ponzu or soy sauce (optional)
-0.5 Tbsp beef better than bouillon or one bouillon cube of whatever flavor you
have on hand.If using Ramen you can use the sauce packet. (optional)
-25-40 Buckwheat soba noodles or your favorite noodle. If using ramen you will
need 0.5 brick of noodles. (Optional)
-Add water and miso to pot
-Bring to boil over medium high heat
- Chop vegis and add them to the pot with the bouillon and ponzu sauce
- Stir
- Add noodles and cook for as long as the noodle package says
-Serve
*Dried mushrooms work too.Be sure to soak your dried mushrooms in room
temperature water for at least 30 minutes before using in this soup.
